Just when you think Minnesota is finally ready to say goodbye to winter, you get this..

I have my fingers crossed that Mother Nature is possibly pulling an early April Fool’s joke? It’s most likely not the case, but hey, a girl can hope right?

Lately I’ve been cooking more than usual, so be ready for a flood of new recipes, videos, and product reviews.

How about starting today with 4 recipes? I taught yet another cooking class for my town’s Community Education program this past Friday.  The theme?

Chocolate

Chocolate Bread with Chocolate Butter

Ingredients:

  • Butter, for pans
  • 2 1/4 cups all-purpose flour
  • 2 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups milk
  • 1 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups semisweet chocolate morsels
  • 1 1/2 cups chopped pecans
  • Chocolate Butter, recipe follows

Directions:

  • Preheat oven to 325 degrees F. Butter and flour (2) 9 by 5-inch loaf pans.

  • In a large bowl combine the flour, sugar, cocoa, baking powder, and salt. Beat in the milk, oil, eggs, and vanilla at medium-low speed with an electric mixer until combined. Beat in the chocolate morsels and pecans. Spoon the batter evenly into the prepared pans. Bake until a wooden pick inserted in center comes out clean, about 1 hour to 1 hour and 15 minutes. Shield the bread with aluminum foil to prevent excess browning. Let cool in the pans for 10 minutes. Remove the bread from the pans and cool completely on a wire rack. Serve with rich Chocolate Butter, if desired.

Chocolate Butter:

  • 1/2 cup butter, softened
  • 2 tablespoons hot fudge topping

  • In a small bowl, beat the butter and fudge topping at medium speed with an electric mixer until creamy. Cover, and refrigerate. Let stand at room temperature for 30 minutes before serving.

Chicken with Cocoa Tomato Sauce 

Ingredients:

  • 4 boneless, skinless chicken breast halves
  • 1/2 teaspoon salt, plus 1/2 teaspoon salt
  • 1/4 teaspoon pepper, plus 1/2 teaspoon pepper
  • 3 tablespoons olive oil, for cooking
  • 1 cup chopped onion
  • 1 teaspoon minced garlic
  • 1 pint tomato sauce
  • 1 pint diced tomatoes
  • 1/2 cup chicken broth
  • 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon sugar
  • Yellow or white rice, cooked and kept warm

Directions:

  • Season both sides of chicken breasts with 1/2 teaspoon of salt and 1/4 teaspoon of pepper. In a cast iron skillet, heat 2 tablespoons olive oil over medium heat. Add the chicken and cook until browned, about 10 minutes on each side. Remove the chicken from pan to a plate and set aside.

  • Add the remaining 1 tablespoon olive oil, onion, and garlic to the skillet and cook for 2 minutes, stirring frequently. Add the tomato sauce, diced tomatoes, chicken broth, cocoa, oregano, basil, sugar, 1/2 teaspoon of salt, and 1/2 teaspoon of pepper. Stir until well blended. Return the chicken to pan, cover and simmer for 15 minutes. Turn chicken over and continue cooking, covered for 15 minutes. Arrange the chicken on a serving platter and serve over rice.

Chocolate Chip Cheese Ball

Ingredients:

  • 1 (8-ounce) package cream cheese, softened
  • 1/2 cup butter, softened
  • 1/2 cup confectioners' sugar
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons firmly packed brown sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup mini marshmallows
  • 3/4 cup semisweet chocolate morsels
  • 1 cup finely chopped toasted walnuts
  • Chocolate and honey flavored graham crackers and fruit

Directions:

  • In a medium bowl, combine the cream cheese and butter.

  • Beat at medium speed with an electric mixer until creamy. Add the confectioners' sugar, cocoa, brown sugar, and vanilla.

  • Beat until well combined. Add the marshmallows and chocolate morsels. Stir to combine well. Cover and chill for 2 hours.

  • Form the mixture into a ball, then roll it in walnuts.

  • Arrange the cheese ball on a serving platter and serve with graham crackers and fruit.

brownies

Peanut Butter Crunch Brownies

(aka better than crack brownies)

Ingredients:

  • 1 batch brownies (boxed mix)

  • 1/2 cup salted peanuts 1 cup chopped

  • Reese’s peanut butter cups

  • 1 1/2 cup milk chocolate chips

  • 1 1/2 cup creamy peanut butter

  • 1/2 tablespoon butter

  • 1 1/2 cups Rice Krispies Cereal

Directions:

  • Mix brownies according to directions, and bake for 20-25 minutes in a 9 x 13 baking dish. Remove and top with peanuts and peanut butter cups, and bake for 4-6 minutes more.
  • While they are finishing baking, melt chocolate chips, peanut butter and butter. Stir in cereal. Remove brownies from oven and evenly pour chocolate mixture over top.
  • Refrigerate for 2 hours before serving.

Sweet Shop Sunday

This work week definitely caught up with me and I am so thankful for Sunday’s off! I need to catch up on housework, other things, etc. but instead I am going to go meet my parents for the afternoon—so everything else can wait. :-)

But what can’t wait is this..

  • My first time making homemade granola barslove them!
  • And, a new video tutorial on how to make my beloved Fiber One Pie Crust..I get quite a few questions on it, so this video is well overdue.

Video Notes

  • 1 1/2 c Fiber One original cereal goes into a Magic Bullet or food processor.
  • Once ground up, add in 1 Tbsp of Fat Free I Can’t Believe It’s Not Butter Spread.
  • Stir, then add in 1 cup of warm water and mix until there are no loose crumbs left.
  • With a spatula, press into 9 inch pie pan and continue with desired pie recipe—you can pre-bake this as well, or just fill with pie filling and eat.

Now onto the granola bar recipe many of you are waiting for!

By the way, if you can make Rice Krispie bars, you can make these!

No-Bake Chewy Granola Bars

Ingredients:

  • 4 tbsp. (1/2 stick) unsalted butter
  • 1/2 cup packed light brown sugar
  • 1/4 cup honey
  • 2 cups plain granola
  • 1 cup rice cereal (Rice Krispies, etc.)
  • 1/4 cup semisweet chocolate chips
  • 1/4 cup any other kind of chips (peanut butter, white chocolate, toffee, etc)
  • Directions:
  • 1. Combine honey and butter in a medium saucepan over medium-high heat. Stir in brown sugar after butter starts to melt.

    2. Bring the mixture to a boil, then lower the heat to medium-low and simmer until the sugar dissolves, about 2 minutes. Remove the saucepan from the heat.

    3. Add the granola and rice cereal into the saucepan and fold them into the sauce until evenly coated.

    4. Spread the mixture into a 9×13 inch ungreased baking pan and press firmly with a spatula to evenly fill. Sprinkle the chocolate and peanut butter chips onto the top of the granola and gently press them down.

    5. Put the pan in the refrigerator until cooled and firm, about 15 minutes, then cut into bars.

    Summertime Snack Attack

    Hope everyone’s week went well and that you have a fun or relaxing weekend planned. As for me, I will be working today and then possibly meeting my parents for a lunch date tomorrow afternoon at one of our favorite buffets! Speaking of eating out, I forgot to mention that last week I ate at Buffalo Wild Wings for the first time ever. We don’t have one in our city yet, but word is one is in the works! I ordered the Buffalitos which are two soft flour tortillas with seasoned, grilled chicken, lettuce, pico de gallo, a blend of cheese, sour cream and whatever sauces you choose. I picked their Spicy Garlic and Caribbean Jerk. I fell in love with both sauces and the Buffalitos were the perfect amount of food, plus I got the roasted potato wedges.

    (Side note: Pasties are a northern Minnesota food that started out due to the huge demand of mining. Many restaurants in northern Minnesota specialize in pasty making. More of the story here.)

    I had to draw the Indian Tribe flags because the wild rice came straight from the lakes surrounding our area and it is harvested and picked by the Native Indians.

    Like I said before, working 6 days a week gives me a chance to finally try all the different on-the-go snacks I have had sitting around for quite some time.

    First of all..have you heard of a jazz apple?

    “Jazz is a modern apple variety, developed in New Zealand in the 1980s. It is a cross between two other major apple varieties - Braeburn and Gala. Not surprisingly it has a lot of "shelf appeal", being a medium size, and with a very attractive appearance. It is marketed as a "bi-colored" apple, because the strong red/maroon color is broken up by areas of green / yellow / orange.”

    It’s by far my new favorite apple!

    Heard of the sugar free Crystal Light Iced Cups? I hadn’t either until I stumbled upon them at Wal-Mart. I got the Lemonade/Cherry Pomegranate flavor—so good, and at only 35 calories a cup, you can’t go wrong!

    I also tried a new-to-me bar, Powerbar Cranberry Oatmeal Cookie.

    Chew Review: It was just ok. It was somewhat small in size, and didn’t really have a taste resembling a cookie at all. However, I did like the generous amount of cranberries and the non-sticky texture of the bar. Probably wouldn’t buy it again.

    Chocolate and peanut butter have to be one of my favorite combos, and rice krispie bars have to be one of my favorite childhood snacks. This bar satisfied it all in one, plus it was a decent size and organic which is a plus!

    First Two Days of the Rest of My Summer

    For those of you who don’t know about my new summer job, read about it here and here.

    Thursday was basically the first day of work, and the first day of what I will be doing the rest of the summer. I work 6 days a week—days spent cooking, learning new things, cleaning, and just enjoy being around all things food! The kitchen I am working in for the Concordia Language Villages is in charge of preparing breakfast, lunch, and dinner for the adult campers, who are actually here for a seminar to learn to teach the language they teach in a better and more effective way—and like I mentioned before, they are coming from all corners of the world.

    Here’s my new kitchen I’ll be cooking in probably more than my home kitchen:

    This is the dining hall where the students will be eating.

    Meals don’t start being served until today, so Thursday and Friday were brutally long days (8-9 hours on my feet) spent stocking the kitchen with everything. During the actual school year, the kitchen is used for other purposes, so we came into a completely empty kitchen. A huge truck load delivered numerous boxes filled with everything from utensils to kitchen appliances. And all things that came through the door had to be washed, so needless to say many many loads of dishes were done.

    Friday, I was pretty much in charge of all things going on. More unloading, and another delivery from the food distributor.

    When the food is delivered, everything needs to be checked on the inventory sheet and put away immediately—it’s quite the process, but I will get the hang of it!

    During this job, I can definitely see I will need to snack a lot to keep up my energy, so it’s the perfect opportunity to try out my outrageously growing bar collection.

    Chew Review: This bar was great! It's made its’ way into my top 5 favorites. I loved how it had the sweet coating both on the bottom and also drizzled on the top. It was the perfect crunch as well. And as far as keeping me full, I don’t think it would as a meal replacement, but it works perfect as a sweet ending to a meal.

    Spring Sweets & Sips

    Do your eats tend to change seasonally?

    Mine usually do—fall and winter are filled with comfort foods, hearty casseroles, baked goods that fill the house with a spiced aroma and an array of winter produce. Spring and summer are a variety of grilled fare, lighter and colorful mixed salads, and a rainbow of produce ranging from yellow summer squash to deep purple eggplants.

    But one taste palate that never seems to change throughout the year is my sweet toothyes, it changes from fruit-studded tarts and back again to rich carrot cakes, however, it never seems to disappear throughout the 12 months of the year. I like to try a different  dessert once a week to switch things up, and every so often, I’ll make a recipe that deserves to be made once, twice, or in this case, three times within a three week period! I almost considered dedicating one whole post to this first strawberry-studded sweet treat, but figured if a little persuading and a few pictures couldn’t convince you, then a whole post certainly wouldn’t. So instead, I’ll give it the honor of being featured first, and then followed by a few other sweets I’ve been enjoying this spring.

    Springtime Strawberry Cheesecake Yogurt Pie

    Serves:6

    Ingredients:

    • 1 Fiber One pie crust (recipe here) or a store-bought piecrust
    • 2 c thinly sliced strawberries
    • 2 Tbsp strawberry jam—I used sugar free
    • 1 tsp sugar
    • 1-8 oz package of fat free cream cheese
    • 1 (6 oz) container of strawberry cheesecake yogurt(from Target), pictured below
    • 2 Tbsp sugar—I used Splenda
    • 1/2 tsp vanilla extract
    • 1/4 tsp almond extract
    • 1 c frozen (thawed) fat-free whipped topping

    Directions:

    • Add sliced strawberries, 1 tsp sugar, strawberry jam, and 1 Tbsp water together in a small saucepan. Bring to a rolling boil and then lower to a simmer until thickened, about 10-12 min. Remove from burner—let cool completely.

    • In large bowl, beat cream cheese with electric mixer on high speed 30 to 60 seconds or until fluffy. Beat in sugar until blended. Add yogurt, vanilla and almond extract; beat on low speed 30 to 60 seconds until well blended and smooth. Fold in whipped topping just until blended. Spoon into crust; spread gently to edge.

    • Refrigerate at least 4 hours or until chilled.

    • Top pie with strawberry sauce. Store pie in refrigerator.

    By far one of the best pies that I’ve ever tried/made..and if you make it with my Fiber One crust, it’s clocks in at just about 150 calories per huge slice!!

    Cinnabon Clone with a Twist

    Ingredients:

    • 1 cup warm milk (110 degrees F/45 degrees C)
    • 2 eggs, room temperature
    • 1/3 cup margarine, melted
    • 4 1/2 cups bread flour
    • 1 teaspoon salt
    • 1/2 cup white sugar
    • 2 1/2 teaspoons bread machine yeast
    • 1 c apple pie filling—I used sugar free
    • 1 cup brown sugar, packed
    • 2 1/2 tablespoons ground cinnamon
    • 1/3 cup butter, softened
    • 1 (3 ounce) package cream cheese, softened—I used fat-free
    • 1/4 cup butter, softened
    • 1 1/2 cups confectioners' sugar
    • 1/2 teaspoon vanilla extract
    • 1/8 teaspoon salt

    Directions:

  • Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
  • After the dough has doubled in size turn it out onto a lightly floured surface, cover and let rest for 10 minutes. In a small bowl, combine brown sugar and cinnamon.
  • Roll dough into a 16x21 inch rectangle. Spread dough with 1/3 cup butter and sprinkle evenly with sugar/cinnamon mixture. Spread the apple pie filling evenly across dough, leaving enough of an edge so it doesn’t squeeze out.

  • Roll up dough and cut into 12 rolls. Place rolls in a lightly greased 9x13 inch baking pan. Cover and let rise until nearly doubled, about 30 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
  • Bake rolls in preheated oven until golden brown, about 15 minutes.

  • While rolls are baking, beat together cream cheese, 1/4 cup butter, confectioners' sugar, vanilla extract and salt. Spread frosting on warm rolls before serving.
  • The addition of the apple pie filling really adds a lot to these Cinnabon clones and takes them from delicious to out-of-this-world.

    Chocoholic’s Scotcheroos

    Ingredients:

    • 1 c light corn syrup—I used Lite, see below

    • 1 c sugar
    • 1 c dark chocolate dreams peanut butter (from PB & Co.)

    • 3 c Rice Krispies cereal
    • 3 c Envirokids Leapin’ Lemurs PB and Chocolate cereal

    • 1 c semi-sweet chocolate morsels
    • 1 c butterscotch chips
    • 1/4 c Reese's Pieces for garnish, if desired

    Directions:

    • Place corn syrup and sugar into 3-quart saucepan. Cook over medium heat, stirring frequently, until sugar dissolves and mixture begins to boil. Remove from heat. Stir in peanut butter. Mix well. Add cereals. Stir until well coated. Press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Set aside.
    • Melt chocolate and butterscotch chips together in 1-quart saucepan over low heat, stirring constantly. Spread evenly over cereal mixture. Sprinkle with Reese's Pieces if desired. Let stand until firm. Cut into 2 x 1-inch bars when cool.

    I loved coming up with this recipe—using the dark chocolate PB and the PB and chocolate cereal really separates these from the original Scotcheroos, and makes them more gourmet.

    And now onto my latest favorite springtime sip…

    A few weeks ago I decided to drop an insane $4 on a Starbuck’s Lite Vanilla Frapbig mistake. It was so good, and I could see that a possible bad habit could be formed. Instead, I figured out how to make an almost identical version for only a few cents! Here’s my mock Starbucks Lite Vanilla Frap tutorial:

    1. Fill a blender or a Magic Bullet with 1/2 c ice.

    2. Pour in 1 cup of cold coffee—I keep a pitcher in the fridge.

    3. Add in about 2 Tbsp of milk—I use unsweetened vanilla Almond Breeze—I recommend a vanilla flavored milk.

    4. Add in sugar free vanilla syrup, about 1 Tbsp. I use Sugar Free Vanilla Torani Syrup—found at Wal-Mart.

    5. Blend by pulsing about 5 times.

    6. Stick in a straw if desired, and slurp!
