Spring Sweets & Sips

Do your eats tend to change seasonally?

Mine usually do—fall and winter are filled with comfort foods, hearty casseroles, baked goods that fill the house with a spiced aroma and an array of winter produce. Spring and summer are a variety of grilled fare, lighter and colorful mixed salads, and a rainbow of produce ranging from yellow summer squash to deep purple eggplants.

But one taste palate that never seems to change throughout the year is my sweet tooth—yes, it changes from fruit-studded tarts and back again to rich carrot cakes, however, it never seems to disappear throughout the 12 months of the year. I like to try a different  dessert once a week to switch things up, and every so often, I’ll make a recipe that deserves to be made once, twice, or in this case, three times within a three week period! I almost considered dedicating one whole post to this first strawberry-studded sweet treat, but figured if a little persuading and a few pictures couldn’t convince you, then a whole post certainly wouldn’t. So instead, I’ll give it the honor of being featured first, and then followed by a few other sweets I’ve been enjoying this spring.

Enjoy!

CIMG2186

  • Add sliced strawberries, 1 tsp sugar, strawberry jam, and 1 Tbsp water together in a small saucepan. Bring to a rolling boil and then lower to a simmer until thickened, about 10-12 min. Remove from burner—let cool completely.

  • In large bowl, beat cream cheese with electric mixer on high speed 30 to 60 seconds or until fluffy. Beat in sugar until blended. Add yogurt, vanilla and almond extract; beat on low speed 30 to 60 seconds until well blended and smooth. Fold in whipped topping just until blended. Spoon into crust; spread gently to edge.

CIMG2194

  • Refrigerate at least 4 hours or until chilled.

CIMG2193

  • Top pie with strawberry sauce. Store pie in refrigerator.

By far one of the best pies that I’ve ever tried/made..and if you make it with my Fiber One crust, it’s clocks in at just about 150 calories per huge slice!!

Cinnabon Clone with a Twist

Ingredients:

  • 1 cup warm milk (110 degrees F/45 degrees C)
  • 2 eggs, room temperature
  • 1/3 cup margarine, melted
  • 4 1/2 cups bread flour
  • 1 teaspoon salt
  • 1/2 cup white sugar
  • 2 1/2 teaspoons bread machine yeast
  • 1 c apple pie filling—I used sugar free
  • 1 cup brown sugar, packed
  • 2 1/2 tablespoons ground cinnamon
  • 1/3 cup butter, softened
  • 1 (3 ounce) package cream cheese, softened—I used fat-free
  • 1/4 cup butter, softened
  • 1 1/2 cups confectioners' sugar
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt

Directions:

  • Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
  • After the dough has doubled in size turn it out onto a lightly floured surface, cover and let rest for 10 minutes. In a small bowl, combine brown sugar and cinnamon.
  • Roll dough into a 16x21 inch rectangle. Spread dough with 1/3 cup butter and sprinkle evenly with sugar/cinnamon mixture. Spread the apple pie filling evenly across dough, leaving enough of an edge so it doesn’t squeeze out.
  • filling

  • Roll up dough and cut into 12 rolls. Place rolls in a lightly greased 9x13 inch baking pan. Cover and let rise until nearly doubled, about 30 minutes. Meanwhile, preheat oven to 400 degrees F (200 degrees C).
  • Bake rolls in preheated oven until golden brown, about 15 minutes.
  • baking

  • While rolls are baking, beat together cream cheese, 1/4 cup butter, confectioners' sugar, vanilla extract and salt. Spread frosting on warm rolls before serving.
  • The addition of the apple pie filling really adds a lot to these Cinnabon clones and takes them from delicious to out-of-this-world.

    Chocoholic’s Scotcheroos

    Ingredients:

    • 1 c light corn syrup—I used Lite, see below

    CIMG2240

    • 1 c sugar
    • 1 c dark chocolate dreams peanut butter (from PB & Co.)

    CIMG2242

    • 3 c Rice Krispies cereal
    • 3 c Envirokids Leapin’ Lemurs PB and Chocolate cereal

    CIMG2241

    • 1 c semi-sweet chocolate morsels
    • 1 c butterscotch chips
    • 1/4 c Reese's Pieces for garnish, if desired

    Directions:

    • Place corn syrup and sugar into 3-quart saucepan. Cook over medium heat, stirring frequently, until sugar dissolves and mixture begins to boil. Remove from heat. Stir in peanut butter. Mix well. Add cereals. Stir until well coated. Press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Set aside.
    • Melt chocolate and butterscotch chips together in 1-quart saucepan over low heat, stirring constantly. Spread evenly over cereal mixture. Sprinkle with Reese's Pieces if desired. Let stand until firm. Cut into 2 x 1-inch bars when cool.

I loved coming up with this recipe—using the dark chocolate PB and the PB and chocolate cereal really separates these from the original Scotcheroos, and makes them more gourmet.

And now onto my latest favorite springtime sip…

A few weeks ago I decided to drop an insane $4 on a Starbuck’s Lite Vanilla Frap—big mistake. It was so good, and I could see that a possible bad habit could be formed. Instead, I figured out how to make an almost identical version for only a few cents! Here’s my mock Starbucks Lite Vanilla Frap tutorial:

    1. Fill a blender or a Magic Bullet with 1/2 c ice.

    CIMG2199

    2. Pour in 1 cup of cold coffee—I keep a pitcher in the fridge.

    CIMG2201

    3. Add in about 2 Tbsp of milk—I use unsweetened vanilla Almond Breeze—I recommend a vanilla flavored milk.

    CIMG2203

    4. Add in sugar free vanilla syrup, about 1 Tbsp. I use Sugar Free Vanilla Torani Syrup—found at Wal-Mart.

    CIMG2204

    5. Blend by pulsing about 5 times.

    CIMG2205

    6. Stick in a straw if desired, and slurp!

    I Scream,You Scream,We All Scream for Ic—Frozen Yogurt!

Yesterday was a glorious day outside—today is another story; rain, clouds, wind—you get the drift. Good thing I am going to spend the day shopping. That always makes a rainy day ten times better right? Hopefully I will stumble upon some good food finds(as if I need more!)ha ha. So before I leave for the day, I just wanted to share a new summer-like treat. Let’s just say I am beyond happy to have a full-sized freezer again =)

Please let me introduce you to Kemp's FF Frozen Yogurt in Wild Blueberries and Cream! I was stoked to find this because I was sad when I left my college town because no more Cold Stone Creamery. =( My fav mix up there was the Sweet Cream with Blueberries and now I can prolong my love with this stand-in. But just for now hehe! Kemp’s describes this frozen yogurt as “Creamy vanilla ice cream with swirled blueberry revel and fresh blueberries”. Are you drooling yet? It didn’t have that “fat free” taste like some things do & it has live active cultures which are good for digestion—so it’s like a treat for your body & soul!

CIMG0183My only complaint is not enough giant blueberry chunks, which is why I decided to take Mr.Kemp’s on a blind date with another lovely friend of mine—a Blueberry Vita Top! Needless to say, they fell in love at first sight and lived happily ever after—in my belly! =)

    A Good Find + A Not-So-Good Find!

    Hey friends!

I just finished my last day of the semester yesterday! I can hardly believe it. One year of college under my belt before I even turn 18! Speaking of 18, I will be turning into the big “adult” in 11 days—wow! Now just 2 finals left(Friday&Monday), and I will be hittin’ the highway home Wednesday.

BTW, there is still tons of Good for You Goodies scheduled to be featured, but most of them have been delivered to my real home, so once I get there I will again begin chowing down to chew review for you! If you haven’t looked at all the previous post for the on-going feature you can always click on the Good for You Goodies tab on the right--->

So I typically love eating yogurt, although I tend to somewhat float away from it in the winter months. I think it’s in part because it’s cold out and who wants something cold when you can eat soup to warm your soul?! And because I eat so much of it during the summer months as dips, with fruit, etc. that I think I over-do it and get kind of sick of it. But that’s okay with me, because for now there is so many new yogurt flavors that are yummy-sounding and good for you too! Thing is, are they really “delicious” and “creamy” and “irresistible” like they claim. I took on 2 for the test. One is my new fav and the other, well let’s just say it left me feeling like Sherlock Holmes in some odd mystery. Read on..

    • Wal-Mart, oh how I love thee. Yes, they don’t always have the best produce selection (has anyone else noticed their bananas are always extremely green?!), but since I have been living in a town with a Wal-Mart I have kept track of my grocery savings and I’m happy to report it is a significant savings! Not only do I love a lot of their Great Value products, but they are the same (ingredients wise) as name brand products but can save you sometimes over a buck or more! Anyway, I decided to put their yogurt up to the test because ever since my old standby of Dannon Light&Fit did something with their new formula, I no longer like the runny stuff. Wal-Mart’s Great Value yogurt has light options and regular and they come in pretty good sounding flavors! And for .40 for a 6 oz. container, it even beat all the other name brand yogurts in price by about .10!(And most of the other ones were even on sale) I have found a new favorite yogurt and definitely wanted to share. Please let me introduce..

    CIMG0115

Great Value Light Banana Cream Pie

It’s creamy, it’s dreamy and OH so full of a real tasting banana flavor! No hints of artificialness here. It goes soo great with anything PB too! I actually topped a open-faced PB sandwich with a couple of dollops of this and it worked like a charm. It’s not runny so it didn’t make it soggy. Plus the taste is definitely not too tangy for me and not overly sweet. Just right! I have a whole buncha banana lovin’ in my fridge…you should too! CIMG0116

This next one was not so good & if it were to be on a show I would throw tomatoes at it!

    • Yoplait Thick and Creamy Cinnamon Roll

    CIMG0113

    CIMG0114

    • This one left me scratching my head—literally. First off, I’m not against Yoplait in any way..and this yogurt’s name had me drooling. A cinnamon roll in a creamy form? Could it be? Sorry folks, no it can’t. I was like Sherlock Holmes trying to solve the mystery of how someone could possibly think this equates to a cinnamon roll. Has anyone else had this experience or what? And I ended up adding my OWN cinnamon to make up for the no cinnamon flavor at all. Despite that fact, I did love the thick and creamy consistency, so I may possibly try another flavor in the thick and creamy line in the future.

    Have a wonderful night Bloggies!

What’s your all time favorite yogurt?

    Whole Foods Treats Revealed

The picture above highlights the appearance of snow. Again. It seems every March we are on the road to spring and then we get blasted with some kind of ridiculous amount of snow. This picture was just the beginning, but we ended up with about 8 inches. Besides that, the windchill was reported at -30. Even the national Weather Channel paid a visit an hour north of my town. Crazy! On a good note, I am revealing what was rolled inside my lunch dessert yesterday! Check out the pic below--Peanut Butter & Co. Dark Chocolate Dreams! As soon as I saw it on the shelf at Whole Foods, I immediately knew I was not leaving without it. I have seen it floating around the blog world for awhile now, and have read nothing but great reviews. So I will add my review also--Upon opening it, I noticed it smelled like a Reese's Peanut Butter Cup and to my delight, it tasted like one too! The perfect balance of chocolate and peanut butter. My cat Peach even seemed enticed by the wonderful jar! Isn't he the cutest?! I also picked up a couple various packets of Justin's Nut Butter & a pack of his almond butter as well. But I already packed them up to come back to college with me, so sorry, no picture! But there is a picture below of the rest of the goodies I picked up.
More Imagine soup! I swear this stuff is like homemade soup, and with a little bit of your own seasonings in it, it's beyond good! I got the Creamy Butternut Squash and the Creamy Red Bliss Potato. They don't carry those kinds in grocery stores around here yet, so I need to make these last!! Next up, I got some Italian marinated tofu squares which I already added to a really good recipe I'll be posting some time this week. Then I got some Harvest Apple Chicken Sausages. I thought they sounded delish and I will soon find out! =) Last but not least, I got a giant tub of 0% Greek Yogurt. Like I said yesterday, it's my first time trying it out, and I loved the consistency of it! I read an article saying once you try Greek yogurt, you'll never go back to regular yogurt. I can see where that can be true! What are some of your favorite ways to use Greek Yogurt? So far I've just used it as a mayo swap! Any other great ideas?? Anyway, I am off to go do some laundry and just relax again. I love the slower pace of home life vs. the crazy life of college, but a little of both makes my life complete! Have a great day--and hopefully the weather in your neck of the woods is MUCH better than mine.

    Home Sweet Home!

Hello everyone! I am back after my really fun vacation! I am totally shopped out; who knew that was possible! But we thrifted the whole weekend, so it wasn't bad for the economy & plus thrifting=recycling which is good for the earth. We also went to Mall of America specifically for ice cream and to people watch. I've been there so many times and it's usually so busy that it's not really fit for quality shopping. We stayed at the LivInn Suites and it was a really nice hotel. Here's a picture of where I ate breakfast every morning.

Well then I found out my camera battery was dead which was pretty sad because I couldn't get any pictures of all my great eats. We ate at Old Country Buffett the first night in St.Cloud. I had salmon,1/2 bake potato chopped up & I mixed it with steamed cabbage, then I had steamed carrots, and a giant salad with the works to finish it off! Tasted like a home cooked meal =) Then the 2nd night we ate at Denny's and I had my standard chicken breast with steamed veggies and a salad. Another great one! And my highlight of that was winning a cute bunny out of the claw machine--I am a pro ha ha. On the way home we just hit up Subway but I did try their new 9 grain wheat bread and it was way better than their old standard wheat. Of course every night we had glorious ice cream too! So now I am finally back to my real home. I was greeted by my happy bulldog and fuzzy cat, and a couple big boxes that came in the mail! Some really good samples that I am keeping a surprise for just a few more days, so hang in there! ;-) I got to go to Whole Foods for the first time and I was very impressed! (Besided the pungent smell of fresh fish that eventually faded!) I spent about an hour browsing and filling the cart. =P Tomorrow I will reveal what I bought!!!! It's yummy stuff. I've already snacked on a little bit of it--but can you blame me?! Anyway, today I got right in the kitchen and whipped up a lunch for my mom and I. My inspiration was from Kath and her Cabbage Cups ,but I did a little different twist to use up things we had here. BTW, this is my first time eating Greek Yogurt! No where near me sells it, so I knew I had to get it when I could. What a great mayo/sauce swap!
Cassie's Cabbage Rolls For Two-> *2 Steamed Cabbage "Cups" *2 Tbsp 0% Greek Yogurt *Handful of Apple Slices, Chopped *Handful of Red/Green Grapes, Chopped *4 Slices Shaved Turkey Breast *Sprinkle of Romano Cheese(or any cheese you want, or no cheese like me!) First, steam the cabbage "cups". I used a Ziploc Steam Bag. Chop the fruit and mix with the yogurt. Place the turkey in the cups then add the fruit/yogurt mixture on top. Add the cheese, wrap it up, and chow down! It tasted like a refreshing spring meal!

Then on the side we had another Imagine soup flavor. This time I tried out the cream of broccoli, which I did not like nearly as much as the previous tomato soup I reviewed, but it was still a great side soup. Then for a little after lunch treat, I made us these.......

Now these may look boring. But there is something GLORIOUS wrapped away inside. I will tell you--tomorrow! Have a glorious Tuesday bloggies!

    [[Healthy]] Brownie Bowl!

There's nothing better than sitting in class & blogging! Lets just say it makes the time go by way faster! The class which is Tech.Foundation is actually fun because it involves design work on and off the computer. But no matter how fun the class, 2 hours can make me antsy. Anyhooo..today I opened my fridge and noticed I still had a VitaBrownie stuffed in my freezer[[Definitely need to get home to stock up]] A brownie seemed like something I could use to concoct another yummy bowl to share w/everyone! So then the birth of my new "Brownie Bowl" took place. My inspiration was the Brownie Batter Blizzard at DQ that looks ever-so-tempting, but oh-so-unhealthy. So I based it with one container of vanilla Dannon Light&Fit yogurt like the last bowl instead on vanilla ice cream in the DQ creation. I then added 1/4 C pumpkin(I always do just for the vitamins, but you could sub some PB for all ya PB lovers out there, or just add more vanilla yogurt) Then I poured in about 2 TBS(?) of Walden Farms Maple Syrup to add some more volume. Next came the VitaBrownie all crumbled up to equal pure goodness, and last but not least, I knew I had to add in some Annie's Cinnamon Bunny Grahams(a handful) for more crunch factor. All together now-->Ok, so it's a little(or a lot)different than the DQ Blizzard, but it's totally on the same track and would be good for a snack, dessert, light lunch or whatever your fancy is. I think trying to recreate restaurant favs that are unhealthy to healthy dishes that you can tweak to your liking is soo fun.

What are your fav restaurant re-creations?!

Happy Thursday everyone! This week unlike last week is dragging on unfortunately. With a big exam next week, the weekend will probably be filled with books, notes, and study snacks. That's college life for you. But I am SO determined to fit in some baking. It's like my therapy; and who skips therapy right?! But I have still been succombing to a creative bug, so I decided to mix up some recipes to eat with what I had on hand. Check out this beautiful bowl of yum! I call it Yummy in my Tummy Bowl. It is packed full of vitamins and minerals, which I need right now because EVERYONE on our floor is coughing/sick/etc. So here's to a healthy treat that will be yummy in your tummy also =) What is in this you ask? Come along and I will reveal this yum yum yummy secret =)
