I am assuming many people are left to face this today?
Or perhaps this?
And even better, if you have some of these..
Because then you can take 20 minutes and make some of these..
And how cool is it that you can make these cupcakes with just this?
CHOCOLATE BLENDER CUPCAKES
Makes 12
Ingredients:
- 1 cup flour
- ½ cup unsweetened cocoa powder (not Dutch process)
- 1 cup granulated sugar
- ½ tsp baking soda
- ¼ tsp salt
- ¾ cup hot water
- ½ cup canola oil
- 1 large egg
- 1½ tsp vanilla extract
Directions:
1. Preheat oven to 375°F. Line 12 regular-sized muffin tin with paper or foil liners.
2. Combine flour, cocoa, sugar, baking soda, and salt in a blender. Cover with the lid and blend on medium-speed until blended. Pour in the water, oil, egg and vanilla. Cover with the lid and blend on medium-high speed until smooth and well-blended, stopping to scrape down the sides once or twice.
3. Pour into prepared pan/cups, dividing evenly. Bake until toothpick inserted in center of one cupcake comes out clean, 15-17 minutes.
4. Transfer to rack to cool for about 10 minutes, and then carefully remove cupcakes from the pan and set them on the rack to cool completely before frosting.
I then topped these cupcakes with a homemade peanut butter frosting and used about 4 crushed mini-Butterfingers for garnish!
How are you using up leftover Halloween candy this year?

Love those butterfingers on top! And how easy it would be to whip up those cupcakes -yum!
umm, YES to that first picture! my apt is seeing candy wrappers galore :)
That is so cool that the cupcakes are made in the blender. Almost mess free!!!
That's definitely a delicious and fun way to use the leftover candy!
This is SUCH a fabulous idea! I was wondering what to do with all of the leftover candy at my house. Looks like I have some baking to do this weekend :)
Such a fun idea. The cupcakes look so tasty. We have no leftover candy! We always get hit really hard (there are a gazillion kids that live in our neighborhood). But maybe I'll buy some for the purpose of these.
you my friend, are brilliant.
OMG. Freaking cool. Butterfingers is one of my fave cupcakes!
what an amazing idea! I actually wish I had leftover candy to use for this. We had so many kids that we hardly had any left.
That looks SO good! I love butterfingers! I had 2 mini ones tonight...or maybe it was 3 :) Guilty! Luckily we don't have much candy left, just what was open when trick or treating was over. I returned $45 worth to the store, THANK GOODNESS! Otherwise, I would've been using my blender just as you did multiple times a day, every day, until it was all gone and hanging out on my abdomen! :)
As much as I LOVE your blog, I wish I did not see this post. OMG those look like the most delicious cupcakes EVER.
Hey! I just found you on Oatmeal Diaries..you're in Minnesota, too! I don't know a ton of Minnesota food bloggers, so I'm super excited to "meet" you. :)
You have given me a new appreciation for my blender!
I was lucky enough not to have any leftover candy! ;-)
