For what you ask?

CALIFORNIA! My cousin and I decided to take an impromptu little vacation  to Los Angeles for a week to just get away. We have a lot planned including tours, Universal Studios, Walk of Fame, the beach, and of course, eating good food along the way!

You can check out my last trip to California recap here:

California, January 2009

-----------------

Onto the food..

A few weeks ago I noticed Duncan Hines had some new baking mixes out and the lovely folks at the company sent me a coupon for a free box. I had a hard time choosing between the flavors in the new Decadent line—there is Classic Carrot, Apple Caramel, and Triple Chocolate. I usually am all about baking from scratch, but I just couldn’t pass these up! Can you blame me? Needless to say, I ended up with the Apple Caramel, and instead of turning them into a cake, I opted for cupcakes! And topped them with some spiced cream cheese frosting. These new Duncan Hines mixes are a must for pantries!

All you need for the mix is water, 3 eggs, and canola oil.

CIMG3435

In the box you get the cake mix and the caramel glaze mix.

CIMG3436

Just add water to the powdered caramel mix and stir—easy peasy!

CIMG3437

Incorporate all ingredients in a large bowl.

CIMG3438

Divide the batter into lined cupcake pan.

CIMG3439

Add about 1 tsp caramel to each cupcake and swirl with a butter knife or toothpick.

And shortly after, your house smells like you’ve been slaving in the kitchen all day..it fools everyone, I promise! ;-)

See you next from the West Coast!!!

LOVE the new blog layout!!!

I'd have chose the apple caramel, too. How yummy is that? And cupcakes are a great idea over cake. Very portable.
